Sally El Kantar is a Ph.D. in Process Engineering graduated from Université de Technologie de Compiègne in France (Sorbonnes Universités Alliance), and in Chemistry graduated from Saint-Joseph University of Beirut. She has a multidisciplinary background and works in different fields. Her research concentrates on the valorization of food by-products through the extraction of bioactive compounds, identification and quantification of bioactive compound extracts using analytical chemistry techniques, synthesis and chemical modifications of new compounds, bacterial expression of proteins for further structural characterization. She teaches courses in Chemistry.

1. Green extraction of polyphenols from grapefruit peels using high voltage electrical discharges, deep eutectic solvents and aqueous glycerol;

2. High voltage electrical discharges combined with enzymatic hydrolysis for extraction of polyphenols and fermentable sugars from orange peels;

3.Pulsed electric field treatment of citrus fruits: Improvement of juice and polyphenols extraction.
